Banana Pancakes

- 1 Banana ripe, mashed
- ¼ C Self-rising Flour
- ⅛ tsp salt
- 2 Eggs
- ¼ tsp Cinnamon, optional
- 1 tsp Vanilla Extract
Combine all ingredients.
Mix thoroughly.
Lightly grease skillet. Use a 1/4 cup-sized measuring cup to scoop the batter onto the hot skillet. Flip when the edges start to get firm and bubbles form and then pop in the batter.
Top with warm berries, or your favorite syrup.
