Apple Crunch Slaw

Ingredients

  • 3 cups broccoli slaw
  • 1 cup fennel, sliced thin
  • 2 medium apples, julienned or sliced
  • 2 tsp fruit fresh, optional (sprinkle on apple to keep from browning)

Dressing

  • ½ c plain nonfat Greek yogurt I use Fage
  • 2 tbsp light mayonnaise I like Duke's or Hellman's
  • 1 tbsp Dijon Mustard Grey Poupon is my choice
  • 3 packets Truvia Sweetener packets or 3 tsp of sweetener of your choice
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp celery seed

Instructions

  • Tossslaw and fennel together. Sprinkle apples with fruit fresh and toss together, add to slaw mix.
  • Whisk all dressing ingredients until smooth and uniform, pour over slaw and toss well until coated.

Notes

Each serving is about 1/2 cup.
