Banana Bread Baked Oatmeal

Banana bread. Only better! It's what's for breakfast. This one is worth waking up for!

Ingredients

  • 3 cups Uncooked Oatmeal
  • 2 scoop Protein Powder (I used Devotion Salted Caramel Cone)
  • 25 g PBfit or PB2 Peanut Powder *Optional
  • 1/4 tsp Salt
  • 1 tsp Baking Powder
  • 1/2 cup Swerve Brown Sugar Sweetener *see note
  • 2 Eggs
  • 1 tbsp Land O Lakes Light Butter with Canola Oil, melted (this is optional or you can use any butter you like)
  • cup Fairlife Fat Free Milk (or your milk of choice OR favorite ready-to-drink protein shake)
  • ¾ cup ripe mashed banana (about 1-1/2 bananas)
  • 1 tsp Cinnamon
  • 1 tsp Vanilla Paste or Extract

Instructions

  • Preheat oven to 350°. Grease a 9x9 baking dish—I use Pam for Baking—and set aside.
  • Add oats, protein powder, baking powder, and salt to a blender or food processor container. Pulse until mixed well and the consistency you want. Alternatively, you can add the dry ingredients to a medium bowl and skip the blending step; just give them a quick mix. (See notes)
  • Add the remaining ingredients to a separate bowl and mix well. (You can use a blender, food processor, hand mixer, or by hand with a spoon!)
  • Pour the wet mixture over the oatmeal mixture, mix well, and pour into the prepared baking dish. Allow to sit for 15 minutes before baking.
  • Bake for 30-35 minutes until a toothpick comes out clean. Enjoy warm or cold!

Notes

Adjust the amount of sweetener based on your own tastes. I go down to 1/4 cup if I'm using bananas, or peaches instead of applesauce or yogurt.
You can put your oats in the blender or food processor first to give them more of a flour-like consistency; it's the way I prefer it. But it's just as delicious if you don't process the oats at all.
You can cut this into bars for a quick snack as well. WW Points will be lower, and it will make eight snack-sized oatmeal bars.
