Unpopular opinion time. I’ve said it before, an Unpopular opinion time.

I’ve said it before, and I’ll say it again: I really want to love overnight oats. But... I just don’t.

I’ve tried. Multiple times. They’re just not for me.

When it comes to oatmeal, I’m a good old-fashioned gal. Give me a warm bowl with butter, brown sugar, banana, cinnamon... and okay, maybe a little maple syrup.

That’s exactly what this Banana Bread Baked Oatmeal tastes like. Cozy. Sweet. Comfort in a bowl. It’s like breakfast pretending to be dessert.  And I’m not mad about it.

It's pumpkin 🎃 season! But I prefer apples 🍎 It's pumpkin 🎃 season! But I prefer apples 🍎. My favorite apple pie filling recipe! Easy and delicious!

2-3 medium apples, peeled
1 tbsp lemon juice tbsp water
1 tbsp water 
1/3 c Truvia Brown sugar
1/8 tsp cloves
1/8 tsp nutmeg
1 tsp Cinnamon 
1 tbsp cornstarch mixed with 1 tbsp water

Add all ingredients to a medium sauce pan (except cornstarch slurry). Heat to a boil then lower heat to a simmer, cook down apples until they are tender, stirring often. Add cornstarch slurry, stir until thickened, remove from heat. Enjoy!

Hey! It’s FriYAY, and that means another recipe Hey! It’s FriYAY, and that means another recipe of the week! 🎉

I’m not big on full-blown meal prep. I’m more of an ingredient prepper.

So, when I’m cooking dinner, I’ll often make extra protein, so I have it ready for a quick lunch or another meal.

That’s how this recipe came together with some lean ground beef I’d already cooked and a few ingredients I had on hand.

The best part? It was quick, made two servings (about 1 cup each), and you can serve it over spaghetti squash, leftover rice, or pasta. Easy and flexible!

Beefy Veggie Stir-fry 
2 servings
1 WW Point
230 cal
28 g Protein

6 oz cooked lean ground beef
1 c mushrooms
2 c Puravida Primavera Roasted Vegetables ( the ones from Costco) OR your favorite roasted veggie mix
3/4 grape tomatoes, halved
1-2 tbs Worcestershire Sauce (I measure with my ❤️)
Salt to taste (this is optional, but i like flavor on my veggies!)
2 tbs pickled jalapeno (this is optional...but it shouldn't be!)
A spritz of avocado cooking spray

Sauté mushrooms on medium-highfor a few minutes, till they just start to cook down and release a little water.

Then add roasted veggies, and saute-steam them until tender, add grape tomatoes, cooked beef, Worcestershire sauce, and jalapenos if using.

Mix well and heat through. Serve with pasta, rice, potatoes, or spaghetti squash. 

Note: you can use any leftover protein OR any veggies your heart desires. Make it your own.
