I was looking for a colorful -- and tasty -- salad I was looking for a colorful -- and tasty -- salad recipe for Easter dinner on Sunday. I don't want a boring old "regular" salad.

I was scrolling and came across one on my own page! 💜😘 It checked all of my Easter dinner salad boxes.

This one will go great with ham AND it's pretty too! 

Apple Crunch Slaw
4 servings 
1 point | 119 calories | 5g protein | 5g fiber
6 servings 
1 point | 78 calories | 3 g protein | 3 g fiber

SALAD
3 c broccoli slaw
1 c fennel sliced thin
2 apples julienned, shredded, or chopped
2 tsp Fruit Fresh (sprinkled on apples to keep them from browning)

DRESSING
1/2 c nonfat greek yogurt 
2 tbsp Light mayo
1 tbsp dijon mustard 
2 tbsp apple cider vinegar
3 packets Truvia Sweetener 
1/2 tsp salt
1/2 tsp pepper
1/2 tsp celery seed

Toss slaw and fennel together. Sprinkle apples with fruit fresh and toss together, add to slaw mix. Whisk all dressing ingredients until smooth and uniform, pour over slaw and toss well until coated.

Now go make it!

Every spring I plant herbs in my raised bed. This Every spring I plant herbs in my raised bed. This weekend I was out there doing a little spring clean-up.

Everything looked dead.

But the deeper I dug, the more I found. Little buds of green pushing through. Unseen. Unbothered. Just... growing.

It made me smile, because isn't that how growth happens?

You don't see it -- until you do.

I live in Pennsylvania, it’s Spring, but not quite I live in Pennsylvania, it’s Spring, but not quite, and it’s not very Winter either--if you know, you know!!

This is the perfect soup for that PA tweener season. I feel like it's the best of both worlds--it warms your belly, but the ingredients kinda feel like spring.

Like Goldilocks says, it’s just right!

Here’s the recipe. Share it, then save it for a day that’s just right...

Chicken Wonton Soup
3 Servings | 312 Calories | 46g Protein | 2 WW Points

120g (3/4 c) Shelled Edamame 
4 c chicken stock
1/2 pack Goya Chicken Bouillon Powder
60g (1/2 c) broccoli florets
1/2 c sugar snap peas
2 ribs celery sliced thin 1 head baby bok choy 1 tbs dried soup veggies (optional) 
1/4 c cilantro
12 oz cooked chicken breast
16 mini chicken cilantro wontons (like the ones from Trader Joe's or Costco) 
Sriracha (I measure with my heart) — you can leave this out...but why???
1 tbs soy sauce

Add stock and bouillon to medium sauce pan, then add veggies, Sriracha and soy sauce. Let simmer until veggies are tender, add chicken, bring to a boil. Add wontons and cilantro, stir. Put the lid on and turn off heat. When the wontons are heated through, enjoy!

It's been a minute. And it's not because I didn't It's been a minute.

And it's not because I didn't have anything to say. It's just, the world is loud right now. Social media is loud.

I have this way of letting the algorithm get in my head. An endless scroll reminding me that I'm not...well, enough. So, I let the conversation go on without me. After all, my story is already being told, only better.

But then I remember that that's never really what this page has been about. It's about the woman who's tired of the noise too. Who knows all the things, has tried all the things, and is still standing in her kitchen at 9pm wondering how she got here — again.

I see her. I am her.

It's been a minute. But I'm here. And I still have more to say.
