Pennsylvania Dutch Chicken Pot Pie

Ingredients

  • 2 lbs cooked chicken breast (I use Costco rotisserie chicken breast)
  • 12 c chicken stock
  • ½ c celery, diced
  • ½ c onion, diced
  • 2 tsp salt
  • 1 tsp fresh ground pepper
  • 1 tsp saffron
  • c Yukon Gold potatoes, peeled and cut into chunks

For the Noodles

  • 2 c all-purpose flour
  • 2 eggs
  • 1/2-3/4 c water or broth (for noodles)

Instructions

  • Add broth spices, celery, and onion to a large stockpot and bring to a low boil. Reduce heat and let simmer until vegetables are tender.
  • When vegetables are tender, add chicken and potatoes and continue simmering until potatoes are tender. Adjust seasonings if needed. Increase the heat just enough to bring the soup to a rolling boil.
  • Working quickly, add the noodle squares a few at a time into the boiling broth, stirring between batches. When all noodles have been added, cover and continue to boil for one minute, then remove from heat and allow to sit for 15 minutes.

To make the noodles:

  • Add two cups of flour in a medium bowl. Crack eggs into a separate bowl and add to flour one at a time (I do this just in case there is a bad egg). Mix eggs into the flour until the dough becomes shaggy.
  • Add the water or broth two tablespoons at a time, and mix until a dough starts to form. Knead until the dough comes together adding more water a teaspoon at a time if needed. If dough becomes too sticky, add more flour a teaspoon at a time to get the right texture.

  • Separate dough into two balls, wrap in saran wrap, and allow to rest for 20-30 minutes.
  • Flour your surface to prevent sticking, then shape dough into a rectangle or square and roll out to ⅛ of an inch thickness, you should not be able to see through the dough.
  • Cut dough into 1x1 inch squares. I use a pizza cutter for this. Repeat with the second dough ball. Add noodles to the soup as per the instructions above.

Notes

You can purchase store-bought pot pie noodles or use bow tie pasta in this recipe if you prefer not to make your own noodles. However, the nutritional values may vary depending on the amount you use.
I usually use only breast meat in this recipe, but you can use whatever chicken or turkey you have on hand. This is the perfect recipe for your leftover Thanksgiving turkey meat.

Happy FriYAY-Weigh!! 

It's been a busy week. But I stayed consistent. I'm not even lying when I say that I danced a little jig this morning after I weighed myself. It was the kind of loss we all want to see  EVERY week, except that it just isn't realistic.

But that didn't stop me from high-fiving my bad self.

It also made me think about the scale and the power I give it to influence my mood depending on its reading. 

Here's the thing, the scale isn't my enemy, and the numbers don't lie. BUT numbers are just the data. Simple metrics--one of lots of ways I measure my progress. It's me who brings meaning (true or not) to the numbers on the scale.

My goal this week is to stay consistent, and when next week rolls around and it's time to weigh in, I'm going to celebrate no matter what the numbers are, because the truth is, I have that choice.

It's FriYAY-Weigh!

I'm down .2lbs this week for a total of 6 lbs this month. 

I caught myself grumbling when I stepped off the scale. I had to remind myself that I'm not in a race, and there's no deadline or expiration date for taking better care of myself.

I turned my frown upside down, stopped grumbling and started gratitude-ing! And you know what I learned?

Gratitude is the cure for disappointment!!!

I've come a long way in three years and I am so grateful for the opportunity to share my journey with you!

AND accountability has been key in helping me in that area. I know that for some of you tracking is a dirty word, but it's been my secret to success all along.

Since I started holding myself accountable again (ie. tracking) I've lost 5.8 lbs.

I make better choices when I'm accountable.
I'm more consistent when I'm accountable.
I'm more disciplined when I'm accountable.
I'm more mindful when I'm accountable.
I'm more focused when I'm accountable.
I'm more empowered when I'm accountable.

Accountability is POWER!

It's fair to say that I spent a good part of 2022 in a funk that spiraled into a complete state of stuck-ness. I felt completely out of alignment.

Stuck-ness was my norm for roughly 30 years, so I know the state all too well--consistently allowing my life circumstances to control my emotions and daily choices tends to put me in a perpetual state of doubt, that leads to paralysis. It's a real growth stunter!!!!

In 2020 I made the decision not to live like that anymore, and I stand by it. I may have lost a little ground last year, but I'm done beating myself up and hiding. 

My plan is simple. You might even call it basic...😆

I'm going back to the basics.

Because they work.

💥Discipline
💥Self Love
💥Accountability 
💥Patience

It's a new year, and yep, still the same me. But I'm showing up with a renewed commitment in all the areas I got stuck last year (which was kind of all of them) and this time I'm coming armed with enough love and grace to push me through to the finish line.

Fairlife Nutrition Plan protein shakes are my personal favorite, so that's what I use for them but you can use your favorite protein shake. And you can make it any flavor you'd like.

1 Packet Nestlé Sugar Free Hot Cocoa Mix
1/2-3/4 C hot water (enough to fill your mug)
3 tbsp whipped topping
Drizzle of sugar free caramel

Warm protein shake in mug, stir or use frother to stir in cocoa mix, fill mug with hot water stir (or froth) well. Top with whipped topping and caramel.. Enjoy!

New year. New you. Yep, diet season has arrived...

Can we PLEASE not fall for that this year? Because the truth is, if you're not loving the old you, you're definitely not ready to love the new you either.

How about we normalize loving ourselves better instead of trying to change all that we think is wrong with us.

It is a new day--and a new year. And I'm living proof that change is possible. But it does not start with a diet. It starts with loving yourself where you are right now.

So instead of vowing to change all that is wrong, commit to loving yourself through every season of the transformation you're seeking--including where you are today.
